2007 Dot’s Garden Estate Zinfandel 15.6%
Tasting Notes: Intense aromas of black cherry, wild blueberry and leather are shown against beautiful caramelized wood flavors.  This wine has bigger structure than most vintages but the tannins are supple and the flavors are rich. it tastes amazing now, but should be even better in a few years.

• Winemaking: We picked only the smallest and most intense Zinfandel vines on October 1st. The fruit was 100% destemmed and began fermentation at 25 brix. The must was kept cool and protected from air for seven days. After this time the primary fermentation began with native yeast. We pressed on the 15 th of October and immediately went to barrel. The wine was aged in a blend of Cadus and Francois Freres french oak barrels, with a total of 75% new oak. The wine had a slow and steady secondary fermentation.
