Technical Specs
Winemaking: We picked the Zinfandel on October 29th. The fruit was 100% destemmed and 50% crushed and began fermentation at 24 brix. The must was kept cool and protected from air for seven days. After this time the primary fermentation began with native yeast. We began pressing on the 14th November and immediately went to barrel. The wine was aged in a blend of Latour, Francois Freres French oak barrels, with a total of 30% new oak. The wine had a slow and steady secondary fermentation. We bottled late September.

Tasting Notes: High tone red cherry and plumb make way for cinnamon, moist earth and leather. Delicate tannins and balanced acidity create a long seamless mouth feel with a clean finish. 250 Cases Produced
